Mace, also known as “macis,” is a spice that originates from the Moluccas islands and is well-known in Indonesia. It is the dried net-like covering of the shell of the nutmeg seed. In the processing of mace, the crimson-colored aril is removed from the nutmeg seed and flattened out, with its color changing to pale yellow, orange, or tan.
How to use
